WHere is an easy take on a cocktail from a new menu. Designed as a party-sized pre-mixed that is packed full of flavours associated with festive period, which makes it ideal for hosting a celebration. Reserve the remaining cordial to use in breakfast cocktails, puddings, or for more rounds of the drink.

Serves 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Citrus Syrup: Put every items into a saucepan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, remove from the stove and let it to reach room temperature entirely. Decant to a sealable bottle, cap it and refrigerate it in the fridge, where it will keep for around one month.
To make Batch Mix: Pour every liquids into a big jug, allow it to infuse for an hour, then pass it through best through cheesecloth, making it perfectly clear.
To serve: Add 85ml of the premix into a cocktail shaker packed with ice, and stir carefully for one minute until cold. Strain to a frosted cocktail glass or similar, top with the cranberries and finish by giving it a quick spritz of the essential oil over the drink.
